1/4 cup shredded Cheddar
cheese
1/4 cup shredded Monterey Jack cheese
1-2 Tablespoons chopped green chile
1 flour tortilla (large)
2 teaspoons melted butter
Distribute Cheddar, Monterey
Jack and green chile over half the tortilla to within 1/2 inch of the edge. Fold
tortilla over and brush both sides with butter. Broil about 3 inches from heat
until top is lightly browned (about 2 min.). Turn over and broil until other
side is browned and cheese is melted (about 2 min.) Serve immediately. Makes 1
quesadilla.
