Great for a quick snack, a
light supper or lunch - these Quesadillas
are healthy as well as wonderful on the taste buds!
4 8-10" flour tortillas
4 Tablespoons chopped frozen green chile, thawed and drained
2 medium green onions, chopped
1/2 - 3/4 cup chopped fresh tomato
1 can black beans, rinsed and drained
2 cups shredded Colby or Monterey Jack cheese
Heat oven to 350° . Spread 1 Tablespoon green chile
on half of each of the four tortillas. Follow with the chopped green onions, chopped
tomato, and black beans, dividing between the four tortillas. Reserve 1/2 - 3/4 cup of the
cheese to use as a topping, then divide the remaining cheese onto the tortillas.
Fold each of the tortillas over the filling and
place on an ungreased cookie sheet or pizza stone. Sprinkle reserved cheese on top. Bake
at 350° for about 5 minutes or just until the cheese is melted. Cut into wedges to serve.
