Forgotten Meringue Cookies

Gluten-Free
The past few years of Mom's
life, she was restricted to a gluten-free diet. These were easy to make
and, with no flour in them, are gluten-free. They're also a great way to
use up leftover egg whites.

2 egg whites
pinch of salt
1/2 teaspoon cream of tartar
3/4 cup sugar
1/2 teaspoon pure vanilla
1 cup chocolate chips

| Preheat oven to 375°
(leave it on for at least 15 minutes).
Beat egg whites until frothy. Add salt and
cream of tartar; beat until stiff. Add the sugar slowly, beating
constantly until glossy. Add the vanilla and chocolate chips.
Drop on greased cookie sheets. Place in
oven, turn oven off. Let the cookies remain overnight or at least five
hours.

Variations:
To vary these, use food coloring for different colors and other flavorings
- try substituting orange or mint flavoring instead of the vanilla. You
can also substitute chopped candy bars for the chocolate chips, or leave
them plain.
