This recipe was in a cookbook that
came with the very first microwave I owned. It's a quick and easy favorite
and has "saved" me many times when I needed a quick dessert.
2 eggs
1 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla
1/2 cup butter (1 stick), melted
3/4 cup unsifted all-purpose flour
1/2 cup cocoa powder
1 cup chopped nuts
In a small bowl at medium speed, beat together
eggs, sugar, salt and vanilla, for about one minute or until light. Add
melted butter. Continue beating until thoroughly blended. Mix in
flour and cocoa at low speed. Stir in nuts. Spread evenly in 8"
square microwave-proof (I use Pyrex) baking pan that has been greased or sprayed
with non-stick vegetable spray.
Microwave at High (100%) for 4-6 minutes.
(If your microwave doesn't have a rotating tray, rotate the dish after 2-3
minutes). When done, the top looks dry and will spring back when lightly
touched. Cool, then cut into bars.
Makes about 20 small brownies.
To frost: Put chocolate bars on the top
of the brownies for the last 30-45 seconds while they're in the microwave, then
spread the chocolate around to frost.
