This is from the recipe that used to appear on
a bag of key limes from our grocery store; it was called Cauley Square Tea
Room's Key Lime Pie. How simple can you get, with only three ingredients to mix
together and pour into a prepared graham cracker crust? The most difficult part
is juicing the tiny key limes. Make sure that you're using actual key limes, not
the regular limes which are bigger and less flavorful (but great for
margaritas).

1 can sweetened condensed milk
1/2 cup freshly squeezed key lime juice (approximately 8-10 key limes)
4 eggs, separated - you'll only need the yolks, so reserve the egg whites for
something else1 9-inch prepared pie
crust (regular or graham cracker)

Whip egg yolks until thick; blend with sweetened
condensed milk. Add key lime juice, mixing only until juice is incorporated. Do
NOT over-beat. Pour into 9-inch baked pie
shell or prepared graham cracker pie crust. Chill until set; overnight is best.
Top with whipped cream if you like (we like!).
