Serves 4 Spice
Mixture:
1
Tablespoon whole coriander seeds
1 teaspoon ground cayenne pepper
1/2 stick cinnamon
1/2 teaspoon brown mustard seeds
1 teaspoon green cardamom pods
1/2 teaspoon ground nutmeg
1 small dried hot red pepper
1 teaspoon whole green peppercorns
1 Tablespoon whole black peppercorns
1/2 teaspoon salt
1 teaspoon minced lemon peel
1 Tablespoon cracked black pepper
Halibut
steak for four people (2-3 pounds)
1 Tablespoon butter
2 Tablespoons olive oil
Greens
or parsley for garnish; lemon wedges
Using
the spice grinder, grind and blend the first eleven ingredients.
Add the Tablespoon of cracked black pepper, stirring into the rest of the
spices. Pat spice mixture thickly
onto both sides of halibut steak, then sauté halibut in melted butter and olive
oil. Spicy coating will become
crusty; cook approximately 3-4 minutes on each side being careful not to
overcook.
Serve
on platter garnished with greens or parsley and the lemon wedges.
