Lime-Ginger Grilled Mahi Mahi

Jay came home with some
frozen mahi mahi one day and I was assigned the task of finding an
appropriate recipe. After searching online I found several
possibilities, and this matched the ingredients we had on hand. With a
couple of adaptations, it turned out to be a really fantastic recipe. We
served it with rice and some
stir-fried bok choy,
also a winner.

1 pound mahi mahi, cut into 2-4 steaks
Marinade:
1/4 cup fresh lime juice (2-3 limes)
2 Tablespoons olive oil
3 cloves of garlic, minced
1 Tablespoon soy sauce
1 teaspoon dijon mustard
1 Tablespoon freshly grated gingerroot
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper

Whisk together the marinade ingredients and
brush onto the mahi mahi steaks. Cook in grill basket over hot (400
degrees) coals for 16-18 minutes, turning over once.
(You may also marinate the steaks in the
refrigerator for 30-40 minutes before grilling.)
