2 Tablespoons butter
4 jumbo or 5 large eggs
1/3 - 1/2 cup chopped frozen green chile (mild or hot; thawed and drained)
1/2 cup shredded Colby or Monterey Jack cheese
salt, pepper to taste
SalsaMelt butter in medium frying pan. Beat eggs, add green chile,
shredded cheese and seasonings. Pour mixture into melted butter over medium heat, stir
gently with wooden spoon until eggs are done. Do not overcook. Serve with salsa
on the side.
