Serves 10 to 12.
Different from the Layered Salad but with
many of the same ingredients, this contains no lettuce. It's healthy and
low carb - if you're watching your carbohydrates, don't use low-fat sour
cream or mayonnaise, use the real stuff! This is great for taking to
picnics.
1 bunch broccoli
(about 4 cups finely chopped)
1 bunch cauliflower
(about 4 cups finely chopped)
1 large onion (about
1 cup finely chopped)
3-4 ribs celery
(about 1 cup finely diced)
2 large red bell
peppers, seeded and finely chopped
1/4 cup chopped fresh
basil leaves
1 small (8-oz.)
container sour cream
3/4 cup real
mayonnaise (NOT Miracle Whip!!)
1 teaspoon garlic
powder
Salt & Pepper to taste
12 slices cooked
bacon, crumbled
Combine finely chopped broccoli, cauliflower, onion, celery and sweet red
bell pepper in a very large salad bowl. Stir in sour cream and mayonnaise,
sprinkle with garlic powder, salt and pepper. Toss all ingredients
together. Top with crumbled bacon. Chill for up to 24 hours before
serving.
