mangoes, peeled, pitted, and diced (about 2 cups)
2 teaspoons finely chopped ginger (I usually keep pickled ginger in a jar on
hand)
1 Tablespoon fresh lime juice
1/3 cup finely chopped sweet red bell pepper
1/2 teaspoon chile powder or cayenne powder
Thoroughly
combine all ingredients together in a mixing bowl.
Makes
approximately 2-1/4 cups.
Serve with tuna, pork, burgers, any kind of meat or fish.
