This is such an easy salad dressing,
don't bother with store-bought!
4 Tablespoons Dijon mustard
4 Tablespoons balsamic vinegar
salt and pepper to taste
1 cup extra virgin olive oil (make sure this is a quality olive oil!)
2 Tablespoons finely chopped fresh basil
1 Tablespoon finely chopped fresh parsley
Whisk together the Dijon mustard and
balsamic vinegar. Add salt and pepper to taste, then drizzle in the olive oil
slowly while whisking rapidly. Whisk until thoroughly mixed and the dressing is
thickened. Stir in the chopped basil and parsley. Use immediately, or if you let
it sit, be sure to whisk again just before adding to your salad.
