The original recipe for this
was printed in the World Wide Recipes ezine; I've made a couple of
adjustments. The dressing is a nice variation.

1 pound green beans
5 slices bacon, cooked and crumbled
3 Tablespoons bacon drippings (add butter if you don't get enough from
cooking the bacon)
1/4 cup red wine vinegar
1 teaspoon sugar
salt and freshly ground pepper to taste
fresh parsley sprigs for garnish

You can prepare the dressing
ahead of time; fry (or cook in the microwave) and crumble the bacon.
Combine bacon drippings (and butter if needed) in a 2-cup Pyrex measuring
cup or other microwave-safe container. Add the vinegar, sugar, salt and
pepper and heat for about 45 seconds on high.

| Steam the green beans until
crisp-tender, drain and place in serving dish. Pour warm dressing over the
beans and sprinkle with the crumbled bacon and fresh parsley sprigs.
Serves 3-4. |
